Pork Blade steak salad with lite blackberry vinaigrette

There are just some nights that you just want something simple, light, & full of protein. I did just that tonight. I had blade steaks and wanted to do something other than mashed potatoes which is my easy go to side dish. Salad sounded great. I made enough for my husband and me.


Pork blade steak was breaded and baked for 25 minutes at 375 degrees.

Salad was made of:
1 1/2 c Spinach
sauteed 8 crimini mushrooms & 1/2 onion in coconut oil
1/2 English cucumber
1 vine tomato
1 tangerine
8 red grapes cut in halves
2 packages of glazed halves pecans
4 T lite blackberry vinaigrette

I cut up the steak and put it on top of the salad.  


It was a light touch to what I already make. Definitely a yummy addition that I'll have to make again.
